A high-carb and high-protein combo is a great way to start the day--and this strawberry goat cheese sandwich is just that. It's filling; it's nutritious; and it's delicious.

Mid Morning Snack

Avocado with Balsamic Vinegar and Extra Virgin Olive Oil

Drizzle organic balsamic vinegar and extra virgin olive oil on avocado halves, and use a spoon to scoop each bite. It's a quick, simple and yummy snack.


Lunch

Tuna Parm and Tomato Melt (from this recipe)

Lunch time is a time for you to recharge--and lunch recipes should be quick and nutritious. This tuna, parm and tomato melt is a great idea because it has sufficient protein, fats, carbs and vegetables. Plus, it's warm and filling, and tastes awesome.

Afternoon Snack

Walnut-Stuffed Medjool Dates

Nuts are forces of nature and king of healthy snacks--and walnuts are certainly among them. According to mercola.com, walnuts have cancer-fighting properties, heart-healthy omega-3, brain-improving vitamins and folate, and a rare type of antioxidant called polyphenol antioxidants that prevent inflammation, a leading cause for cancer development. Walnuts also improve male reproductive health, metabolic parameters in people with type 2 diabetes, and overall weight control.

For natural snacks, dates are also desirable, because of their abundance in "calcium, amino acids, sulphur, iron, potassium, phosphorous, manganese, copper, and magnesium."

Together, walnuts and dates make quite a wholesome combo--and that's why I recommend this delicious clean eating snack of toasted walnuts stuffed in sweet medjool dates.

Greek Salad

When it comes to salads, a colorful and supple plate of Greek salad makes one of the best choice. Its veggies are crunchy and the dressing is flavorful. You can add meat for extra protein if you want to, but the Greek yogurt dressing offers plenty of protein already.

Not sure about you, but I prefer eating light at night, and therefore recommend this easy and tasty Greek salad.

Healthy Dinner Recipe: Salmon with Avocado Cucumber Topping

Clean Eating loves salmon!

Protein is essential in the clean eating diet, but it's also hard to find easy-to-do protein meals besides chicken and turkey. Not today's salmon though, which takes less than 30 minutes, and is as delicious as the more common protein choices.



Salmon is one of the healthiest forms of protein.

Because in addition to protein, it's rich in omega-3, vitamins, phosphorus, selenium, iodine and potassium, and helps improve cardiovascular health, mood and cognition, joint protection and sight. Eaten with healthy vegetables and organic cheeses, like in today's clean eating recipe, this salmon meal is even healthier.

Plus it's tender in texture and full in flavor--a great alternative to chicken and turkey.

Healthy Dinner Recipe: Salmon with Avocado Cucumber Topping

Ingredients:

- 1 avocado, de-cored, peeled and diced
- 1 cucumber, peeled and cubed
- 1 tea spoon of dill
- 2 table spoons of soft cheese (either organic cream cheese or organic cream cheese)
- 1 table spoon of crumbed feta cheese
- 4 ounce Atlantic salmon
- Sea salt
- Ground black pepper
- 1 tea spoon of lemon juice
- 1 table spoon of extra virgin olive oil
- 2 tea spoons of white wine or mirin
- Olive oil cooking spray

Directions:

1. Pre-heat oven to 350 F.
2. In a mixing bowl, add salmon.
3. rub sea salt, pepper, olive oil and wine all over salmon on both sides. Mix well.
4. Put salmon on baking sheet and bake for 20 min, or until salmon's thoroughly cooked.
5. While salmon's cooking, add avocado, cucumber, dill, soft cheese and feta in another mixing bowl. Mix well with spoon.
6. When salmon's finished, transfer it to a plate and top with the topping mixture you just made.

Breakfast

Mid Morning Snack

With 20 grams of protein per bar and only about 230 calories, Think Thin High Protein Bars are about the best healthy snack bars on the market. They're also sweet, tasty and chewy--not much different from candy bars but better for you.

I LOVED the brownie crunch flavor (seen below), but enjoyed peanut butter chocolate flavor too.

Broccoli Turkey and Cheddar Wrap

Afternoon Snack

Steamed Edamame with Sea Salt

 Edamame are soybeans harvested before beans harden. Like beans, they're gluten-free, low-calorie and low-cholesterol, but abundant in protein, calcium and iron. 

The beans inside the shells are soft, chewy and fun to eat. Steamed or boiled hot and sprinkled with sea salt, these snack-able veggies make a great way to satisfy the munchies. If you crave something salty, bypass the potato chips and go for edamame.

By the way, if you can't get raw edamame, there are pre-packaged frozen edamame that you can pop in the microwave to heat, or dry roasted edamame that you can grab and go.


  For dry roasted edamame, I recommend Sensible Foods Roasted Edamame. They are delicious!


Dinner

Apple and Avocado Salad (recipe here)

Adding fruits to vegetables is a good way to mix flavors and nutrients.

Today's clean eating dinner is a mixture of sweet apple chunks and supple avocado. Tossed in organic poppy seed dressing and on top of mixed greens, the apples offset veggies' natural bitterness. This salad was tasty, light and refreshing. I absolutely enjoyed it!

Glad I ran into this awesome and easy-to-do salad. Using natural ingredients like sea salt, cold-pressed olive oil and vinegar, this crunchy veggie bowl is full of both nutrition and flavor.
